Meatless Mondays

Have I mentioned Meatless Mondays? I feel like I have so many experiences/stories/photos to share that I can't always keep track of what I rant talk about here on the blog and what I simply think I need to blog about. At some point several months ago, Shannon and I were discussing weekly meal planning {don't be envious of our incredibly stimulating topics of discussion, please}. During our riveting conversation, we were mulling over the potential monotony of home-cooked meals - especially for our family since pork, chicken and beef are our only sources of meat {mean mommy only occasionally makes seafood okay, it was only one time in the past seven years and I don't typically venture to more "exotic" foods like lamb, quail or duck}.

Truth-be-told - I don't really like meat. In fact, I would be perfectly happy to prepare dinner for Tax Man and LE each night and then simply enjoy the starch and veggie dishes, or better yet, just eat a bowl of cereal. I love to cook, and I love to eat, but I'm pretty particular about my meats.

And so, from this conversation {how much can I talk about an extremely boring topic of discussion?}, Meatless Mondays were born.

Tonight's menu...

Cauliflower Soup from Pioneer Woman and Buttermilk Biscuits. Yum. Yum. Yum. {Click link from the caption above for the recipe}. Extremely simple to prepare - started at about 5:45 pm and we had eaten and cleaned up the kitchen by 7 pm - and really tasty. Peanut stirred through her soup to find more and more "yummy things" {carrots and celery} and happily slurped up her bowl. A night without me having to say "eat your dinner, LE" 654,002 times is a good dinner night.

Tax Man... well, he doesn't exactly love Meatless Mondays. For obvious reasons. He likes meat. I frequently have my volunteer commitment meetings on Monday nights - Junior League and Ballet Board happen to both fall on Mondays, so I don't often have to hear his complaints.

But, I discovered his dirty little secret last Wednesday, when I mixed it up and made it Meatless Wednesday. Menu...

Cannellini Beans atop toast points and Lemon Fettuccine. Both recipes from The Happy Everything Cookbook by Coton Colors and both delivering deliciousness sans meat. His apparent confusion on Wednesday night at the lack of meat led to a confession - guy has been known to stop for a burger on the way home on Mondays, to compensate for Meatless Meals. Hmmm... looks like I'll be abandoning my menu board for a few weeks to keep him on his toes...

Not completely changing subject, since we were at a place called The Tomato Cafe...

Shannon and I treated just the girls to a little afternoon tea several weeks ago at a small cafe in a nearby little town.

The accessories were abundant...

And the food rather tasty {though the service left much to be desired}.

And best of all, the company was beyond perfect. Read about their sweet friendship on Shannon's post from a few weeks back.

Happy {Meatless} Monday!
